One of my all-time favourite drinks for the holiday season is eggnog. And it is something I make often and drink a lot at Christmastime and into the New Year.

This is a very nice recipe. It’s by Tasty Yummies.

I like to make my own cashew milk. But you can use Silk.

Vegan Eggnog Recipe

Ingredients

2 cups homemade cashew milk or other non-dairy milk of your choice
Β½ cup full fat coconut milk
β…“ cup raw cashews, soaked overnight or for at least 30 minutes (optional)*
4-6 Medjool dates
1 teaspoon vanilla extract
1 teaspoon freshly ground nutmeg
pinch of ground cinnamon
pinch of ground cloves
pinch of sea salt

Instructions

Add all of the ingredients to your high speed blender and process until smooth and creamy. Serve immediately, as is or add spiced rum, bourbon, brandy or whiskey, for a spirited version. Add…

  1. A couple of years ago, I wrote to the company that makes Bailey’s Irish Cream to ask them if they could make a vegan version using cashew ‘milk’ or the like. One day, back in 2017 while reading Vegan Health & Fitness there was a blurb about how Baileys will be launching a vegan version of their Irish cream for January 2018, I think. Now, I’d like to think my writing to them had something to do with them launching a vegan version, but who knows. I liken it to ‘squeaky wheel gets the oil…’ but… I have yet to see it sold in any of my local liquor stores, have you?

    • Called Baileys Almande, it’s made with almond milk, almond essence, cane sugar, purified water and real vanilla. Unlike the dairy-free version which launched last year (made with honey and beeswax), the new Baileys is entirely vegan too. … And it’s safe to say British vegans are hugely excited by the news.Sep 18, 2017
