What if Everyone in the World Became a Vegetarian?

The meat industry is one of the top contributors to climate change, directly and indirectly producing about 14.5 percent of the world’s anthropogenic greenhouse gas emissions, and global meat consumption is on the rise. People generally like eating meat—when poor people start making more money, they almost invariably start buying more meat. As the population grows and eats more animal products, the consequences for climate change, pollution, and land use could be catastrophic.

I’m going to have to find the recipe for this – it’s one of the more appetizing-looking veggie burgers. Sweet potatoes are one of the best veggies around – tempura dipped is heaven, and I’ve even seen a recipe for sweet potato-filled chocolates, they’re that sweet and good.
With prosperity does come more meat eating, it seems. How promoting this Western idea of an improved standard of living in developing countries with a population estimated to be about 11 million in 2050 will mesh with combatting climate change and saving wildlife, I have no idea. Doesn’t really make sense. 😦
